LalBrew NovaLager is a true bottom-fermenting Saccharomyces pastorianus hybrid (non-GMO), selected to produce clean lager-style beers with the optimal fermentation performance and pitch rate of an ale yeast.

Produces lager styles at higher fermentation temperatures, lower pitch rates (50- 100 g/hL) and faster fermentation times than traditional lagers.

Produces a clean, unique lager profile with high attenuation and high flocculation. Flavour profile is clean, low to medium ester, no sulfur.

Fermentation results in low levels of VDK/diacetyl and the yeast will not produce hydrogen sulfide (H2S), leading to reduced maturation times associated with Lager beer production. Produces low to medium esters and expression of β-glucosidase enzymes promotes biotransformation and complexity of hop aromas.
